Tiger Cake
A beautiful dessert with a chocolate and vanilla swirl.
It is no secret that I am a big fan of bundt cakes. They are so easy to make, everyone loves them, and they freeze well, so it is easy to make them in advance. You might know this chocolate and vanilla swirled treat as a “marble cake,” but the Finns have always called it Tiger Cake.
Along with a Yogurt Cake, Spoon Cookies, or Slice Cookies, Tiger Cake is a go-to treat you are likely to find as part of a Finnish coffee break spread. Finns drink more coffee per capita than anyone else in the world, and they always like a sweet little nibble to enjoy with a cup.
This recipe can be made in a bundt pan or a loaf pan and then cut into slices. Just be careful not to “over-swirl” the two batters together. A simple spin around the pan with the end of a wooden spoon does the trick!
